This. Is. The. Easiest. Salad. Ever.

And the prettiest. Perhaps the most unexpected, as well. It’s not a crazy combination, trust me. These flavors have been combined by many to create a sweet and savory summer salad. Because feta cheese is so mild, it can be paired with — and complimented by — watermelon without tasting unappealing. Fresh herbs and the bite of balsamic vinegar tie it all together.

This is my version of the watermelon and feta salad. Instead of using cubes, I thought it would be aesthetically pleasing to plate the watermelon as a “steak”, garnished with the feta, mint, and balsamic vinegar.

watermelon + feta salad

serves 2-4, 10 min prep time

1/2 watermelon, sliced and quartered
1/2 cup crumbled feta
drizzle of balsamic vinegar
mint, as garnish

Place watermelon slices on a plate.

Top with crumbled feta.Drizzle as much balsamic vinegar you'd like, but I recommend being modest. Garnish with mint leaves and serve chilled.
