It’s the end of September , but the temperature has been in the 80’s for a few days now. And I have had enough. I’m someone who embraces the fall and everything that comes along with it - yes, even pumpkin spice everything. I especially love the cooler temperatures. But I won’t be getting any relief from the weather soon, so today I’m getting my  popsicle on.

This recipe will show you how easy it is to create a fun, unique, and healthy popsicle at home. I typically use fruit and coconut water or natural fruit juice as the base and from there the possibilities are endless.

strawberry + currant popsicles

makes 6 servings, 30 min prep + 4 hr freeze time


2 cups lemonade, separated
2 cups strawberries, halved
1/4 cup currant juice
popsicle molds
6 popsicle sticks


Make strawberry lemonade: In a blender, combine the strawberries and one cup lemonade. Blend until smooth.

Assemble first layer: Pour in the strawberry lemonade into the popsicle molds until one-third. Freeze for an hour.

Assemble second layer: Pour in equal amounts of one cup of lemonade into the popsicle molds. Place popsicle sticks into mold. Place back in freezer for an hour.

Assemble third layer: Pour in equal amounts of the current juice into the popsicle molds. Freeze for at least two hours before enjoying.
